- Ilish oil with plane rice with smashed boiled potato, onion and green chilly.
- One piece of fried ilish.
- Vegetables with ilish head with lentil pulses (musur dal).
- One piece of ilish bhapa.
- One piece of doi ilish.
- One piece of ilish jhal with corriendar leaves (dhania pata)
- Ilish tak of tail portion (sour).
2018

- One piece of doi ilish.
- One piece of narkel ilish
- Besara (Odishi dish, ilish with garlic)
- Ilish tak of tail portion (sour).

How are you ? My apology , I could not send you that Odiya Ilish recipe , I am very badly tied down. Before sending the recipe i wanted to cook once..but could not get any good Ilish , whatever is available is Rs 2000 kg.
I am giving the recipe for your use. I dont think it is a good idea for the Ilish ushav...We bengali's are quite inflexible in food preparation.

This preparation is called besara ( for prasad or vege dish,, dont add garlic, likw we do Panch mishali tarkari..or kumro etc )
masla
jeere, sorshe rosun kacha lanka bata ( one jeere and 3 sorshe is the ratio.), semi thin with water ..I mean not very thick paste
For sombora ---- jeere , sorshe equal amount and dry red chili.
for souring ..Amshi or lemon juice. ( This dish will be bit sourness to your taste and liking)
sallow Fry the fish on high heat for a short duration and remove. If the fish is fresh no need to fry )
Give sombora , put the mashala, salt and Amsi ( If you are using lemon juice, then add at the end not here0.
Bring to boil and boil on slow heat for 5 - 8 min .
Slide in the fish and boil for another 3-4 minutes..It will be like a thick jhol and not makha makha - Oh yes add holud in the masla
and lanka guro, if people want , few kacha lanka is also good
